Enough for 3 lunches
300g hot smoked salmon
3 cups pre cooked green lentils
1/4 cup peeled and roasted hazelnuts
2 heads of radicchio, roughly chopped
1 bunch of dill, picked and roughly chopped
1 tbs lemon juice
1 tbs sherry vinegar
1 tsp dijon mustard
1 tsp seeded mustard
1 tsp honey
5 tbs extra virgin olive oil
Pinch of salt and pepper
- To make the dressing, place all of the ingredients into a small jar and shake like crazy for 30 seconds.
- Then it’s pretty simple; place one third of the salad ingredients – except for the feta – into a large bowl and dress the salad with some of the dressing.
- Season the salad with salt and pepper and toss everything together.
- Throw the dressed salad into your serving bowl and then top with chunks of the feta.
