Butterflied BBQ chicken with green marinade

Serves 4

INGREDIENTS

1 chicken – Butterflied
Marinade
5 bay leaves – fresh or dried
2 tsp dried oregano
1 tsp smoked paprika
1 handful of fresh parsley
zest of 1 lemon
2 tsp salt
fresh black pepper
2 tbs olive oil

METHOD

Butterfly the chicken, or ask your butcher to do this for you.
Finely chop the bay leaves, oregano and parsley. Place all the ingredients for the rub into a mortar and pestle, or a small food processor and blend them together. Rub the marinade over both sides of the chicken. Place the chicken, skin side down on a grill over an open fire or onto a preheated BBQ. Cook the chicken for 15 minutes on both sides. To test if the chicken is cooked, pierce the chicken with a skewer in the thickest part of the chicken, either the breast or the leg. If the juice comes out with blood through it, the chicken needs to go back on. If the juice runs clear, it’s cooked through and ready to serve.
Portion the chicken into about 8 pieces and serve.
